Dextrose is a monosaccharide with a sweetness level of around 70 to 75% relative to sucrose. It has a high solubility and a notable cooling effect when dissolved. Fructose sits at the other end of the sweetness scale, typically around 1.2 to 1.8 times sweeter than sucrose depending on concentration and temperature, and is highly soluble in water.

Isomalt, a sugar alcohol derived from sucrose, has roughly half the sweetness of sucrose, low hygroscopicity, and a high melting point, making it technically distinct from standard sugars in a number of ways. Its stability at high temperatures is a well-documented characteristic, and its calorific value is lower than that of sucrose. 

Maltisweet, a maltitol-based sweetener, has a sweetness profile closer to sucrose than most other sugar alcohols, sitting at approximately 75 to 90% relative sweetness.
