Liquid Sweeteners

Glucose syrup is produced through acid and enzyme hydrolysis of starch derived from wheat or maize, yielding a clear, viscous liquid composed of dextrose, maltose and higher saccharides. It is available at different dextrose equivalent (DE) values, including 42 DE and 63 DE grades. DE indicates the degree of starch hydrolysis: a higher DE means a greater proportion of reducing sugars and higher relative sweetness, giving manufacturers a choice across a range of sweetness levels and functional properties.

Golden syrup, including Sucranna and Tate & Lyle N1000, is a partially inverted sugar syrup formed from a blend of sucrose, glucose and fructose naturally present in sugar cane, giving it its characteristic amber colour, dense viscosity and caramel notes. It reduces water activity and lowers freezing point in a formulation. It is available in 25kg packs, with smaller multi-pack formats also stocked.

Invert sugar syrup, such as Ragus OL78, has a higher sweetness value than granulated sugar and a lower tendency to crystallise, helping maintain a smooth, soft texture over an extended shelf life. It also helps control moisture retention and can depress the freezing point in frozen formulations.

Fructose syrup, including Fructomix F50, is a high-sweetness liquid sugar with a clean flavour profile and good solubility characteristics.

As with all liquid sugar products, these syrups should be stored in a cool, dry environment away from direct heat sources to maintain viscosity and prevent premature crystallisation.
